has to be made at least once.
Here's one I made earlier.
Unfortunately my violets look more like crystallised mayflies.
I think I was a little heavy-handed with the egg white.
I think your "mayflies" are quite lovely next to all those colors:)

Oh, what a sweet and pretty cake! I've heard good things about the Ballymoe cookbook (and have seen the author featured a time or two in magazine articles). How do you like the book?

I like the book more for sentimental reasons than practical ones because I have been lucky enough to stay at Ballymaloe House. The photography is lovely and I often read the seasonally arranged recipes and accompanying text, but I don't honestly cook very many of them!
