Strawberry Bellinis



According to Something To Do, 
my trusty guide since 1966 for all things seasonal,

The 21st June is Midsummer's Day, the longest day in the year. 
The sun rises earlier and sets later than on any other day. 
It is also a day of magic, 
when fairies (if you believe in them) 
feast and dance from midnight to dawn.
Years ago people used to light bonfires on Midsummer's Day 
to encourage the sun to shine. 
They would hurl burning discs into the air 
and roll blazing wheels downhill 
in imitation of the sun's journey across the sky.





We, on the other hand, lit a candle and made Strawberry Bellinis.
This encourages the fairies.

  6. I think a strawberry Bellini is just the right cocktail for a 21st birthday garden bash! I have a rather talented & beautiful niece who makes the most of a very bad situation in life and has just completed a History degree in Liverpool. She is having her 21st at my house before we move to Cumbria in the summer and I think she would love this as a toast! All I need now are the instructions of how to make it!!! Pretty please??!!

  7. Well it wasn't really a recipe, just some pureed and sieved strawberries put into the bottom of a champagne flute and then topped up (slowly) with Prosecco. The more authentic version is Peach Bellini with pureed peaches and a few pureed and sieved rapsberries for colour.
